Kalix löjrom is the north’s luxury food: small orange grains of roe with a legally fixed origin. Here is what the protected name guarantees, when the season runs, how Swedes serve it, why the price swings, and how to tell the real jar from the rest.

When you need this

You see löjrom on a menu, at a Christmas buffet or in a food hall and want to know what you are ordering. Or the jars at the fish counter vary wildly in price and you want to know why. Or you are heading to Luleå, Kalix or Haparanda in autumn and want to taste it where it is made. Or you want a jar as a souvenir and wonder whether it survives the flight.

What Kalix löjrom actually is

Löjrom is the roe of the vendace (siklöja), a small fish of the salmon family. Kalix Löjrom is a protected designation of origin, a PDO (Swedish SUB), registered by the EU in 2010. It was the first Swedish food to get that status, the same kind of protection as Champagne or Parmesan.

The official specification is short and strict. The only additive is 4.0% salt. The roe must be orange on a fixed color scale, taste round and mild of fish oil and salt, and hold firmly enough to stay in a spoon turned upside down. The roe is squeezed out of the fish by hand on the day it is caught.

Not caviar, not kaviar

“Sweden’s caviar” is a compliment, not a description. In the north it is still called the caviar of Kalix, but it is a different product from sturgeon caviar. It is also different from the tube kaviar every Swede eats for breakfast.

Where it comes from

At sea, the protected area runs from the mouth of the Åby river in the south to the mouth of the Torne river at the Finnish border, and no more than 40 km out from the coast. On land, all the preparation steps (rinsing, whisking, sieving, drying, salting and final cleaning) must happen in one of four municipalities: Piteå, Luleå, Kalix or Haparanda.

The specification links the product to the water. Eight larger rivers and many smaller ones run into this corner of the Bothnian Bay. The vendace there feed on plankton and insect larvae, and that diet gives the roe its orange color. Roe from freshwater vendace is yellow.

The season: fresh in autumn, frozen all year

Vendace gather along the northern coast in autumn to spawn, and that is when they are caught. Trawling for vendace in the Bothnian Bay is allowed from 20 September to 31 October, or until the Swedish Agency for Marine and Water Management (Havs- och vattenmyndigheten, HaV) stops it. At most 40 trawl permits are issued each year.

The specification describes a five-week fishing period, and the grains grow through it: about 0.8 mm in week one, about 1.3 mm in week five. Early-season roe is finer and crisper, late-season roe softer.

Fresh roe exists only during the catch, and only in small quantities. Most is sold frozen or thawed, and the specification says its character is unchanged either way. That means a jar in February is the same product as one in October, so you don’t need to time a trip for it.

How to eat it like a Swede

Cold and simply. Don’t cook it. The classic northern serving is:

  • Thin northern flatbread (tunnbröd) or butter-fried bread
  • Sour cream (gräddfil) or crème fraîche
  • Finely chopped red onion (rödlök)
  • Dill

Chefs also pair it with almond potatoes (mandelpotatis). Swedish Lapland’s visitor board says it has been served at the Nobel banquet and at royal weddings. At home, keep portions small: it is rich and salty.

Thawing: move the jar to the fridge well ahead. Sellers suggest 12–24 hours depending on the amount. Never thaw it on the counter, because room temperature raises the risk of bacterial growth.

Buying it: the label check

The word löjrom on its own guarantees nothing about origin. Vendace roe is also produced elsewhere and imported, from Finland and Canada among others, and it can legally be sold simply as löjrom. Only roe that meets the specification may use the name Kalix Löjrom.

Look for three things on the jar:

  1. The protected name Kalix Löjrom, not just löjrom.
  2. The EU’s protected designation of origin label, which the EU says is mandatory on protected food products.
  3. The catch year and best-before date on frozen jars. Sellers label each season’s catch by year.

In a restaurant, asking to see the jar is an accepted way to check. It matters in lean years: back in 2018, the coastal fishers’ producer organisation warned that small catches let roe sold under a false designation onto the market.

Why the price swings

Each female vendace gives roughly 3–5 grams of roe, so a kilo takes a couple of hundred fish, all handled by hand. The size of the catch is the other half of the price.

Vendace is not under an EU quota. HaV manages it nationally, and each year it orders scientific advice from SLU, the Swedish University of Agricultural Sciences, before setting the conditions in the permits. The catch has swung widely. A record 1,550 metric tons was landed in each of 2014 and 2015. For 2021, SLU advised no catch at all, and HaV halved the cap to 454 metric tons from 880 the year before, citing ringed seals eating more vendace and fewer young fish. That October, retail prices passed 6,000 kronor per kilo.

Many of the “Kalix roe threatened” stories still shared online date from 2018 and 2021. Check the date before you take one as this year’s news. Current prices are in the table below.

Tasting it in Kalix

The Kalix municipality and the Swedish Board of Agriculture have worked to build the town into a destination around the protected name. Local restaurants often serve Kalix löjrom, but it depends on the season and the chef, so don’t assume every menu has it.

In autumn, local operators run “roe safaris” where you see how the roe is taken and taste it. Ask the local tourist information, or check the Kalix municipality’s tourism pages. In the coastal village of Storön, a fish shop sells from a self-service freezer with digital payment even when it is closed, and Kalix löjrom is often in it. For the wider trip, see Haparanda and the Torne Valley and the Luleå travel guide.

Sellers often sell out of the previous catch in late summer, before the new one arrives.

Taking it home

Pack it in checked baggage. Swedish aviation rules count pastes and mixtures of liquid and solids as liquids, with a 100 ml limit per container in hand luggage, so a jar of roe risks being taken at security. Pack it frozen and sealed. Before you leave, check your home country’s rules on bringing in fish products. Souvenirs from Sweden covers food souvenirs and the airport in more detail.

FAQ

What is Kalix löjrom?

It is the salted roe of vendace, a small salmon-family fish, caught in the Bothnian Bay between Piteå and Haparanda in northern Sweden. The name has been an EU protected designation of origin since 2010, the first Swedish food to get one. Only salt is added, and the roe must be prepared within the four coastal municipalities.

Is Kalix löjrom the same as caviar?

No. Caviar in the strict sense is sturgeon roe, black-grey with large grains. Kalix löjrom is orange vendace roe with grains of about one millimeter and a mild, salty taste. It is also not Swedish tube kaviar, which is smoked cod roe sold as a sandwich spread. In the north it is still called the caviar of Kalix, as a compliment.

When is Kalix löjrom season?

Trawling for vendace in the Bothnian Bay is allowed from 20 September to 31 October, or until the marine agency stops the fishery. Fresh roe is sold in small quantities during that catch. The rest of the year you get frozen or thawed roe, which the official specification treats as the same product, unchanged in character.

How do you eat Kalix löjrom?

Cold and simply. The classic northern way is on thin flatbread or butter-fried bread with sour cream or crème fraîche, finely chopped red onion and dill. Chefs also serve it with almond potatoes. Thaw frozen roe slowly in the fridge, never at room temperature, and keep portions small: it is rich and salty.

How much does Kalix löjrom cost?

A lot, and it varies by catch. In October 2026, online fish sellers listed frozen Kalix löjrom at roughly 2,700 to 4,000 kronor per kilo. After the catch cap was halved in 2021, prices passed 6,000 kronor per kilo. Jars of 250 or 500 grams are common, and a small portion per person is normal.

How can I tell if löjrom is really from Kalix?

Read the label. Genuine roe carries the protected name Kalix Löjrom and the EU’s protected designation of origin label. Vendace roe is also imported, from Finland and Canada among others, and can legally be sold simply as löjrom. In a restaurant, asking to see the jar is an accepted way to check.

Can I take Kalix löjrom home on the plane?

Yes, but put it in checked baggage. Swedish aviation rules count pastes and mixtures of liquid and solids as liquids, limited to 100 ml per container in hand luggage, so a jar of roe risks being taken at security. Pack it frozen and sealed, and check your home country’s rules for fish products first.
