Here is what’s on the Swedish Easter table and why: the eggs, the herring, the lamb and the drinks. You’ll also find which day the meal falls on, how to handle it as a guest or restaurant diner, and the 2026 egg-safety update.
When you need this
A Swedish family has invited you to their Easter meal and you’d like to know what you’re walking into. Or a restaurant board in March says påskbord, påskbuffé or påsklunch. Or you’re self-catering in a rented cabin over Easter and want the Swedish version on your own table. Pregnant, vegetarian or allergic to egg or fish? This is the one Swedish meal where that needs a plan.
What a påskbord is
A påskbord (“Easter table”) is the Easter edition of the smörgåsbord: a spread of cold and warm dishes that add up to a full meal. Sweden’s national inventory of living heritage lists the smörgåsbord as a tradition of Christmas, Easter and Midsummer, and of restaurants too.
Isof, the state Institute for Language and Folklore, puts the Easter version in one sentence: it often looks like the Christmas table, but with considerably more eggs. If you know the julbord, Sweden’s Christmas buffet, you already know most of the påskbord. The differences are eggs in every form and, often, lamb.
Not every Easter meal is a buffet, though. Isof notes that today a smörgåsbord or lamb is common, so a plated roast-lamb dinner counts as an Easter meal as well.
Saturday, not Sunday
The main Easter meal is on påskafton, Holy Saturday. Isof’s 2016 Easter survey found it’s the day most households eat a special Easter meal. Visit Sweden calls it the main day of the celebrations. It’s also the day children get their candy-filled paper eggs (påskägg).
Habits vary, and Isof notes the feast is less tied to Saturday than it used to be. Some families eat on Easter Sunday instead, often lamb. If you’re invited, just ask which day.
| Day (2027) | Date | Legal status | For the meal |
|---|---|---|---|
| Maundy Thursday (skärtorsdag) | 25 March | Ordinary day | Peak food-shopping day |
| Good Friday (långfredag) | 26 March | Public holiday | Systembolaget closed |
| Holy Saturday (påskafton) | 27 March | Ordinary day | The Easter meal |
| Easter Sunday (påskdagen) | 28 March | Public holiday | Some families eat lamb |
| Easter Monday (annandag påsk) | 29 March | Public holiday | Systembolaget closed |
On Maundy Thursday most Swedes buy their Easter food. Isof cites over 80% more food sold than on other Thursdays, so if you’re self-catering, shop earlier in the week. In 2028 Easter falls later, 13–17 April.
The dishes, decoded
Isof’s list of what’s often on the table: eggs, salmon, herring, Jansson’s temptation, meatballs, small sausages, potatoes and lamb. Visit Sweden adds gubbröra and the many herrings.
| On the table | What it is |
|---|---|
| Ägghalvor | Halved boiled eggs, often on lettuce, topped with shrimp or löjrom (vendace roe) |
| Gubbröra | Chopped egg mixed with ansjovis, eaten on bread |
| Inlagd sill | Pickled herring in several sauces: spiced, with cloves and onion, or mustard |
| Lax | Salmon, poached, fried, cured (gravad lax) or smoked |
| Janssons frestelse | Jansson’s temptation: a gratin of potato, onion, cream and ansjovis |
| Köttbullar, prinskorv | Meatballs and small sausages |
| Lamm | Lamb, on the buffet or as a separate roast |
| Potatis | Boiled potatoes, the base for the herring |
One word trips up almost every visitor. Swedish ansjovis is not Mediterranean anchovy. It’s spiced, pickled sprat, a small relative of herring, according to the University of Gothenburg. Swap in salty anchovy fillets and Jansson’s or gubbröra comes out a different dish.
Isof’s archives also hold a western Swedish table with spinach, vegetable pie, cheese pie, smoked salmon and onion herring. Older regional dishes, such as Easter porridge (påskgröt) and a bird-shaped bread (påskduva), survive mainly in the records. The herrings in particular vary by family and region; pickled herring explained goes through the sauces.
At a large påskbord, the julbord habit works here too: herring with potatoes first, then the other fish, then a clean plate for the warm dishes. Nobody will hold you to it at a small home table.
Why so many eggs
It goes back to Lent. In the Catholic period, eating eggs during the Lenten fast was forbidden, Nordiska museet says. Easter ended the ban, and it came just as hens start laying again in spring. So the eggs were plentiful exactly when they became allowed.
The habit survives in several forms: halved eggs on the buffet, egg salads, boiled eggs painted at the table, and candy-filled paper eggs for children. Fish was allowed in Lent, which is how salmon and pickled herring stayed on the feast table too.
A 2026 update on eggs. Most guides, and older Swedish advice, say Swedish eggs are practically salmonella-free and safe raw. In April 2026 Livsmedelsverket, the Swedish Food Agency, published a risk assessment that changes the picture. Since 2021 Salmonella Enteritidis, the type that can get inside the egg, has been the most common kind found in Swedish laying flocks. Larger outbreaks have been linked to Swedish eggs since 2022.
The risk from raw or lightly cooked Swedish eggs is still low, at about a quarter to a third of the EU average. But it has risen, and the agency says its advice to heat-treat only non-Nordic eggs needs review. Hard-boiled Easter eggs are not the issue. Think homemade mayonnaise and soft-boiled eggs. As of October 2026, no revised consumer advice had been issued.
Lamb, fish and the vegetarian table
Lamb carries religious symbolism and is common on Nordic Easter tables. But it’s newer than many assume: Visit Sweden notes lamb entered the Swedish Easter table only in the 20th century. Before 19th-century industrialisation, Easter meals were sparse and built on pickled and preserved food, mostly fish. Today many påskbord still have no lamb at all.
Vegetarian and vegan options are increasingly common: Visit Sweden notes that gubbröra can be made with mushroom and potato instead of egg. At a restaurant, ask when you book.
Drinks and the Systembolaget window
The Easter table drinks påskmust, beer, light beer and snaps. Påskmust is a dark, sweet soft drink flavored with spices, malt and hop extract. It’s also julmust under an Easter label: the same essence, only the bottle label differs. Many breweries release Easter beers. For snaps, sip rather than knock it back; snaps and aquavit covers the drinking songs.
Anything stronger than 3.5% alcohol is sold only at Systembolaget, the state alcohol monopoly, and you must be 20 to buy it there (18 to be served in a restaurant). Over Easter it has one half-day window. In 2026 its stores kept ordinary hours on Maundy Thursday, closed on Good Friday, opened until 15:00 on Holy Saturday, and closed on Easter Sunday and Monday. The 2027 hours weren’t published by October 2026, but the closures follow the public holidays. Buy on Thursday. See Systembolaget’s holiday hours for every holiday.
At a restaurant
Some restaurants serve an Easter buffet across the long weekend, typically Maundy Thursday to Easter Monday, at lunch and dinner, for a fixed price per person. Offers change from year to year, and Holy Saturday is the day to book early. We don’t publish prices: each restaurant sets its own for each day and sitting.
Give dietary needs when you book. Restaurants must be able to tell you which of the fourteen declarable allergens a dish contains, and egg, fish, crustaceans and milk all feature heavily here. A buffet adds a risk the recipe doesn’t show. Guests share serving spoons, so traces of any dish can end up in any other. For a serious egg or fish allergy, ask the kitchen for a plated portion. Eating out with food allergies has the details.
Pregnancy and allergies
Livsmedelsverket’s advice on Swedish buffets in pregnancy fits the Easter table dish for dish:
- Fine: pickled herring (the herring is usually Atlantic-caught), the warm dishes, vegetable dishes, hard-boiled eggs.
- Care: bought cured or smoked salmon. It can carry listeria, so eat it within a week of the packing date.
- Avoid: cold mixed salads (röror) containing smoked or cured fish, and pâtés.
At home, a host who knows about an egg allergy can keep egg dishes on their own spoons. That’s worth a quiet word before the meal.

FAQ
What is a påskbord?
A påskbord is the Swedish Easter buffet, a version of the smörgåsbord. Isof, the state folklore institute, describes it as often resembling the Christmas table but with far more eggs: halved eggs with shrimp or roe, pickled herring, salmon, Jansson’s temptation, meatballs, small sausages, potatoes and often lamb. Most families eat it at home on Holy Saturday.
When do Swedes eat their Easter meal?
Mostly on Holy Saturday, påskafton, which in 2027 falls on 27 March. Isof’s Easter survey found it is the day most households eat a special Easter meal, though habits vary and some families eat on Easter Sunday instead, often lamb. Holy Saturday is not a public holiday in law, but it is the main family day of Swedish Easter.
Why do Swedes eat so many eggs at Easter?
Because eggs were forbidden during the Lenten fast in the Catholic period, and Easter ended the ban. Hens also start laying again at this time of year, so eggs were plentiful just as they became allowed. The habit survives as halved eggs, egg salads and painted boiled eggs on the table, plus candy-filled paper eggs for children.
What is the difference between a påskbord and a julbord?
Mostly the eggs and the lamb. Both share herring, salmon, Jansson’s temptation, meatballs and small sausages; the Easter table adds eggs in every form and often lamb, while the Christmas table centers on the Christmas ham. The timing differs too: the julbord belongs to Christmas Eve, the påskbord mainly to Holy Saturday, when most households eat it at home.
Is lamb traditional at Swedish Easter?
Yes, but more recently than people assume. Lamb carries religious symbolism and is common on Nordic Easter tables, yet Visit Sweden notes it entered the Swedish Easter table only in the 20th century. Today some families serve it on the buffet and others as a separate Easter Sunday dinner. Many påskbord have no lamb at all.
What do Swedes drink with the Easter meal?
Påskmust, a dark, sweet, spiced soft drink that is julmust under an Easter label, plus beer, light beer and snaps for adults. Many breweries release Easter beers. Anything above 3.5% alcohol is sold only at Systembolaget, which in 2026 closed on Good Friday, Easter Sunday and Easter Monday and opened until 15:00 on Holy Saturday.
Can I eat a påskbord at a restaurant?
Yes, at some restaurants. A number serve an Easter buffet over the long weekend, often from Maundy Thursday to Easter Monday at lunch and dinner, for a fixed per-person price. Offers change from year to year, so book ahead for Holy Saturday and state allergies or vegetarian needs when booking, not at the buffet, where spoons are shared.
Can I eat a påskbord when pregnant?
Mostly yes. Livsmedelsverket’s buffet advice says pickled herring, warm dishes and vegetable dishes are fine. Take care with bought cured or smoked salmon, which should be eaten within a week of packing, and avoid cold mixed salads containing it and pâtés, because of listeria. Hard-boiled eggs are fine; lightly cooked eggs carry a small salmonella risk.
